Yes.

And it would be quite an efficient idea for restaurants to serve from one
kitchen...

Plus I think the nation can afford many more kitchens than it can copper
infrastructures...

But the reason the kitchen sharing doesn't happen as often as it would be
efficient is restaurants see their chef/kitchen as a differentiator whereas I
suspect the customers see it as part of the overall equation.

Of course the food-court is the the reverse, and perhaps Internet model,
autonomous kitchens serving the same seating area.
