Are the hosts on your network configured to use an external dns server?
If so they are probably resolving the mail.something.school.nz address
to the external public address.

If so, set them up to use either a dns server on the linux box, or give
them local host files pointing them to the linux box internal ip address
for mail.something.school.nz
