Short answer. take mail.something.school.nz out of your hosts file.

That will mean it resolves mail.something.school.nz via whatever your normal
DNS server is, in turn it should get your external IP address.
The theory being it makes it as far as the router, which realises it's one
of it's own interfaces, and just loops it back.

Try it out & see how it goes.

PS: this is based on the assumption that 192.168.2.1 is your M1122's IP
address.
